Sunday Post: Recipe for Self-Esteem

 

A recipe, according to the dictionary, is a list of ingredients and instructions for making something, especially a food dish.

Jake at Time after Time has a Sunday Post Challenge and every week he provides a theme…this week’s theme is RECIPE.

I love soup!  Do you?  Soup can be hearty or light, warming or cooling…soups are so easy to make and, when you make them yourself, you can use healthy nutritious ingredients and leave out the preservatives, high sodium levels and artificial colors that are rampant in most canned or packaged soups you buy at the store.

Here is a recipe for Cock-a-Leekie Soup…absolutely delicious…and very easy to make, even your kids can help!

COCK-A-LEEKIE SOUP

You will need: 1 large pot, 1 lb boneless chicken breasts cubed, 2 slices bacon, 1 large leek sliced (about 2 cups), 1 cup sliced fresh carrots, 2 cups cubed potatoes, 1 container low sodium vegetable broth (32 oz), 1 cup basmati rice, 2 Tbs single malt scotch (optional), ½ cup diced prunes, 1 Tb dried basil, 8 cups water.

1.      Saute bacon in pot…add chicken pieces and sauté a few minutes.

2.      Add sliced leeks, carrots and potatoes and stir well.

3.      Add vegetable broth, prunes, water and basil and stir well.

4.      Bring to a boil, add rice and scotch…lower heat, cover and simmer for 1½ hours.

5.      Serve with crusty bread and a simple tossed salad.

6.      Store in covered container in fridge.

7.      Makes about 12 cups of soup…you can easily make less by cutting the ingredients in half.

 

So what is the recipe for helping a child develop a high self-esteem?

1.      Help your child master tasks and skills.

2.      Encourage your child to value his own strengths and qualities.

3.      Help your child to feel appreciated and loved.

4.      Encourage your child to express his feelings.

5.      Help your child to acknowledge and cope with his fears.

6.      Encourage your child to accept himself and his body.

Kids love to help in the kitchen…not only does that time with you build self-esteem, but it also helps children develop reading readiness skills (or better literacy skills if they are older).  They also learn about good nutrition, and many picky eaters will try new foods that they have helped make.

Project 365 Challenge: Menu Magic…I Have a Dream-y Fruit Salad

Today is Martin Luther King Day.

Tributes are taking place across this country and all over the world.

Here’s an easy-to-make dessert from Chapter Two (I’m Special: Helping Your Child Value His Own Strengths and Qualities) of my book that will have your children dreaming sweet dreams.

 

DREAMY FRUIT SALAD

Children love to help in the kitchen.  They acquire skills as they measure and mix ingredients and “read” the recipe.  One of the basic components of developing true self-esteem is mastering tasks and skills.  So why not invite your child to assist you when you make this delicious and nutritious dessert.

You will need: 1 large package vanilla instant pudding, 1½ cups milk, 1 diced apple, 1 peeled navel orange (sectioned), 2 bananas (sliced), ½ cup sliced strawberries, ½ cup blueberries and a large bowl.

1.      Mix instant pudding and milk in a large bowl.  Chill for 10 minutes.

2.      Add diced apple, orange sections, bananas, strawberries and blueberries and mix together gently.

3.      Makes 4 – 6 servings.  Store leftovers in an airtight container in the refrigerator.

4.      Creative tip: use your imagination and substitute different fruits.

Project 365 and the 2012 Positive Parental Participation Challenge

Last year, bloggers on WordPress were given a challenge to write a post every day…it was called Post-a-day-2011.

This year, another daily post challenge has been issued by WordPress…Project 365.  Why not Project 366 since 2012 is a Leap Year with 366 days?  However, I guess if bloggers are able to write 365 posts in 2012, I’m sure they will consider themselves an unqualified success…I know I would.

I took part in the 2011 Post-a-day challenge and started out 2011 writing posts every day…this lasted about three months.  After that I tried to post at least twice a week…sometimes I succeeded, but other times I didn’t.  I take my hat off (or would if I wore one) to those bloggers who completed the task and made it to the end of the year, still posting every day.

For 2012, I am throwing my hat into the ring (even though, as I’ve already stated, I’m not wearing one) and will try to provide a post of value for every day.

In addition, I’m also issuing a challenge to every parent of young children.  Make 2012 a year of engagement with your child!  Read with your child every day!  Be positive and consistent!  Get back to the basics and spend time with your child doing fun-filled educational self-esteem building activities, like arts and crafts or simple cooking experiences.  Keep a journal of the picture books you read and the activities you do.  Share them here with us.
