Help! Where Am I? I’m Lost!

It was a cold gray late afternoon in New York City. 

 I was on my way home from a student teaching assignment in an unfamiliar part of Brooklyn.  Leaving the school, I quickly walked to the subway station and boarded the train that would take me home.  As the train pulled away from the very next stop, I realized that the name of that station was not one I recognized.  Now I watched carefully as the train pulled into the next few stops.  More unfamiliar names!  A sick feeling formed in the pit of my stomach.  I had gotten on the wrong train! 

I must admit that I panicked.  I got off at the next stop.  Instead of finding a uniformed security person and asking which train I should board to return to the right route, I ran up the subway stairs, hailed the first cab that passed by, gave him my address and sat back, heart pounding. 

It was an expensive lesson…the cab ride cost me $10 and that was A LOT of money in those days…but I did get home safely, so I guess it was worth it.

Have you ever been lost?  Maybe there was a detour and you found yourself driving around and around, wondering which road to take.  Perhaps you went for a hike on a park trail and meandered off to look at some interesting rock formations or a bunch of wild flowers and now you are not sure which way to go to return to the main path.

Many young children also worry about getting lost or separated from those they love.  Although we want to encourage curiosity and independence, we are responsible for keeping our children safe from harm.  Teaching your child his name, address and phone number, and what to do in case he is ever lost is very important and will enable him to feel more confident about his own ability to deal with such a situation.  Reassure your child that you will always find him, no matter what…this will contribute to his feeling of safety.

You can also help children talk about their concerns by reading picture book stories that address the issue of getting lost.  While you read the story, a window of opportunity for discussion opens…so please take advantage of it.  Here’s one story suggestion on that topic:

ANGUS LOST written and illustrated by Marjorie Flack

This is a classic in children’s picture books.  The copyright date is 1931 and the illustrations hearken by to a bygone era.  That might be part of the charm of the story and you and your child can have a wonderful conversation about how milk was delivered in the olden days. J 

Angus, a little terrier, is bored with his home and yard and he decides to see what the world is like.  After several scary adventures, Angus wants very much to go home, but he cannot find his way.  He spends the night hiding in a cave, trembling in fear the entire time.  In the morning, he hears the familiar sound of the milkman’s horse and wagon and he eagerly follows them from house to house as the milkman makes his deliveries.  Finally, Angus recognizes his very own yard and is relieved to be home at last.

After you read the story and talk about it, perhaps you and your child would like to make some “real” butter. 

CHILD-FRIENDLY HOMEMADE BUTTER

You will need: 1 cup heavy whipping cream, electric mixer and a large bowl.

1.     Pour the cream into the bowl and beat on medium until stiff peaks are formed (about 2-3 minutes).  This is REAL WHIPPED CREAM!!! 

2.     Continue beating (4-8 minutes) and you will see the curds separate from the whey.  You can sing “Little Miss Muffet” with your child while you are doing this and do the finger play later.

3.     Pour off the whey and you will be left with a lump of pure butter.

4.     Enjoy with crackers, bread or toast.

5.     Put the leftover butter in a covered container and store in the refrigerator.

6.     Instead of using the electric mixer, you could put the cream in a glass jar with a lid and shake…but this will take 5-30 minutes…and everyone’s hands will be tired.

Never Too Busy For Your Child

Sometimes it’s really hard to juggle all we have to do as parents…home, family, work, social and/or athletic pursuits.  Yesterday I offered a few simple suggestions that will save time.

So what should you do with that extra time?  If you have a young child, why not read a story with him or her and do a little eco-friendly craft project and a child-friendly healthful cooking activity?  The time we spend participating positively with a child leave a lasting impression on him and help build self-esteem and a life-long parent-child bond.

THE BOOK: The Very Busy Day written by Diana Hendry and illustrated by Jane Chapman

            Big Mouse is busy working hard in the garden and constantly grumbles that Little Mouse should help him instead of continuing his seemingly useless daydreaming.  Little Mouse, however, has not been wasting his time, and has actually prepared a picnic for Big Mouse. 

            The story stresses the importance of spending time with your loved ones.  Perhaps you and your child can tackle the task of simplifying and organizing together. 

THE CRAFT: HOMEMADE STORAGE BOXES

You will need: Shoeboxes and/or boot boxes (with lids) or other size cardboard boxes, self-adhesive shelf paper (or gift wrap…you will have to glue this on), labels made from a blank piece of paper.

1.    Decide what toys or supplies will go in each box.

2.    Cut the shelf paper to wrap around the outside of the box and lid and press in place.

3.    Write the name on the label (and draw a picture) of the toys or supplies that will be stored in the box and attach to the box.

THE RECIPE: NO-BAKE PEANUT BUTTER BALLS

You will need: 1 cup peanut butter (health food stores often grind various nuts fresh daily and the cost is comparable to the leading brand peanut butters…for a little more money you could request cashew or almond butter for a different taste sensation), 1 cup honey, 2 cups non-fat dry milk powder, 1 ½ cups crushed cornflakes or shredded coconut for rolling the balls in, 1 large bowl, 1 cookie sheet lined with wax paper.

1.    Mix the nut butter, honey and 2 cups of non-fat dry milk powder in a large bowl till well blended.

2.    Roll mixture into small balls…about the size of a walnut.

3.    Roll the balls in the crushed cornflakes or shredded coconut.

4.    Place on waxed-papered cookie sheet and refrigerate for 15-20 minutes.

5.    ENJOY!!!!!

6.    Place uneaten balls in an airtight container and store in the fridge for up to a week.

7.    This recipe makes about 18-24 pieces, 150-175 calories each…the more you make per batch, the smaller they will be and fewer calories each, of course.

Super Foods for a Super You in 2011

Next time you are shopping in your local supermarket, think about putting some of these super foods in your cart.  Each one on the list provides important health benefits for you and your family.

If some of these foods are unfamiliar, why not resolve to try a new food every week.  There are many online recipe sites you can go to: http://allrecipes.com/Recipes/Main.aspx and http://www.foodnetwork.com/ are two excellent sites to start at.  Your local library probably has a wonderful selection of cookbooks that you can borrow for free.  Of course, there are some people who just LOVE cookbooks (like me and my sister) and enjoy collecting them because we love seeing how many ways there are to make a particular dish.   If reading this makes you smile in recognition, a trip to new and used bookstores, as well as garage or tag sales can result in finding a cookbook treasure.

How about a dinner menu that’s beautiful to look at, delicious to taste, and contains several of the super foods…so you know it will be bursting with health benefits for you and your family.  Let your children help you prepare the meal and you will reap several other benefits: fussy eaters often eat what they have helped prepare and children gain confidence and develop competence when they master kitchen tasks and skills.

 GRILLED SALMON WITH ORANGE SLICES

You will need: 1 lb salmon fillet, 1 Tb olive oil, 1 Tb dried dill (you can substitute basil or thyme), 1 Tb honey, 1 orange

  • Wash the salmon fillet and pat dry with paper towel.
  • Mix the olive oil, honey and dill in small bowl and brush some on the salmon, reserving the rest for basting.
  • Heat the grill and place the fillet, skin side up, on the grill.
  • Grill on low for 5 minutes, turn and baste with the oil/honey/dill sauce.
  • Grill an additional 10 minutes or until the fish is cooked through.
  • Slice the orange and use it to garnish each serving of salmon.

This should feed 4 people…add some steamed broccoli and multigrain rolls for a Super Food Extravaganza!
